I've got an amazing breakfast casserole recipe to share with you today! This bad boy is loaded with all the good stuff- we're talking biscuits, sausage, bacon, the works! I layer it all up and then take it to the next level with some homemade sausage gravy on top. It's perfect for when you've got a full house or just want some leftovers for the week. Preheat oven to 350 degrees.
Spray a deep dish 9 x 13 baking dish with cooking spray.
Cook the breakfast sausage and set aside about 3/4 of it. The remaining sausage and grease will be used for a roux.
Cook bacon oven at 375 until desired doneness, then chop into small pieces and set aside.
In a pan on med heat cook down onion in some bacon grease for about 5 min then add spinach. Cook until wilted then remove pan from heat.
Beat eggs and season with SPG.
Quarter grands biscuits and add to baking dish.
Next layer with sausage, bacon, spinach, and onions.
Pour beaten eggs over mixture.
Sprinkle Colby jack cheese on top and bake uncovered for 30 min at 350.
In the meantime make your gravy. on low med heat add flour to sausage and stir until covered(remove excess grease if it looks like too much before adding flour)
Let flour cook off for a couple min before working in milk.
Season with SPG and allow to thicken.
After 30 min add gravy to top of casserole and then bake additional 30 min at 350 degrees.
Remove and allow to slightly cool before enjoying!
