Get your grill/ smoker set up for indirect heat at 250 degrees.
Cut bologna chub in half.
Cut vertically through each chub 4-5 times but don't cut all the way through. Leave around 3/4" at base intact.
Turn chub and repeat in opposite direction.
Hit with a binder(bacon grease, mustard, oil, etc) then season generously with BBQ rub of choice making sure to get in all the nooks and crannies.
Place on smoker for around 250 degrees for about 3 hrs. If you want it even crispier you can leave for 3.5-4 hrs.
Serve with your favorite mustard oil cheese sauce and enjoy!
