Brisket Grilled Cheese

It's worth smoking an entire brisket just to make a brisket grilled cheese. Cheesy goodness with sweet bbq sauce and the crunch of some pickled onion. Doesn't get much better!

Chop brisket, then season with bbq rub and shred cheese if needed, then set aside.
Get griddle set to low medium heat and put down bacon grease.
Add shredded Colby jack and then about 1/4lb brisket.
Top with a generous amount of BBQ sauce and pickled onions if desired.
Add white cheddar cheese to the top then toast on both sides until cheese is good and melty. Enjoy!
